I've seen that if i type gimme all at the beginning of a Doom1-2 game (so i've only fist and pistol, with 50 clip), i obtain all weapons/ammo/artifacts, but i can't choose weapons 3-8 (from shotgun to BFG9000) anymore.

Maybe it's not giving you any weapons? Have you tried gimme weapons after using gimme all?
